For the construction of the cellar, two challenges were faced? : Integrating the site with the landscape and the technical side, provide natural thermal regulation. The solution of a chai star was the most suitable. The central point of this star promotes ventilation while the branches are buried for the aging cellar barrels, or semi-buried for the portion of vinification. The insulation is done naturally and inertia of the walls allows to maintain a uniform temperature.
In this winery, well studied winemaking are in compliance with the grapes we grow.
